Love pizza, but don’t love sugar and carbs? Here is a healthier way to make your favorite edible sin! Zucchini pizza is fast and easy, and most importantly, Low Card and Gluten Free.
Ingredients (1 serving):
1 medium zucchini
1tbl Greek yogurt butter
4oz tomato paste or pizza sauce
1.5 oz mozerella cheese
1 cup raw baby spinach
(Add any other vegetable toppings you like)
Preheat oven to 400 degrees
Cut zucchini in half length wise
Spread on yogurt butter
Bake for 10 minutes (otherwise zucchini will be gushing water with each bite)
Remove from oven and turn down to 375 degrees
Add pizza sauce, veggies, and cheese
Bake 10 minutes.
